Monday Brunch at Maharlika Edition III

Yet another Monday Brunch at Maharlika came and went this past Monday, March 26th. Three times a charm as this was the best yet. The monthly complimentary for industry brunch was once again sponsored by Heaven Hill and featured PAMA, Admiral Nelson Spiced Rum and Blackheart Spiced Rum cocktails created by Maharlika co-owner and bartender, Enzo Lim. Bartenders, consultants and spirits media enjoyed lumpia, their entree choice of Chicken & Ume Waffles, Crab/Eggplant Omelette or Longsilog (sausage, fried egg and rice) and coconut rice pudding while taking turns on the kareoke mic and sipping on these custom Lim mixed drinks:
Arakis Punch
In a large container (or punch bowl), combine:
16 oz ea. mango juice, pineapple juice, Admiral Nelson Spiced rum, Blackheart Spiced rum
2 oz PAMA liqueur
1 btl sparkling wine (750 ml)
Add a large piece of ice and stir until properly chilled
garnish as you see fit.
Nelson’s Blood
1.5 oz Admiral Nelson Spiced rum
.75 oz lime juice
.5 oz Velvet Falernum
.25 oz PAMA liqueur
.25 oz. simple syrup
Shake all ingredients with ice in a mixing vessel
strain into a chilled coupe.
Old Blackeart
2 oz Blackheart Spice rum
.25 oz demerara syrup
1 d Angostura bitters
1 d Angostura orange bitters
Stir all ingredients with ice in a mixing vessel
strain over fresh ice in a rocks glass
garnish with an orange peel.
